I find the holidays inspiring; celebrations are a great excuse to get into the kitchen and create something new. My goal is generally to develop recipes simple enough to make before rushing off to a party, but still impressive enough to delight my hosts. This red, white, and blue dish (the white comes from the chia seeds) can be made with the berries whole or crushed. It also makes a great spread for breakfast toast.
Yields: 4 servings | Prep Time: 5 minutes
Ingredients
1 c. raspberries
1⁄2 c. blackberries
11⁄2 c. blueberries
1⁄4 c. white chia seeds
1⁄4 c. agave nectar
Juice of 1 lemon
Zest of 1⁄2 lime
Steps
Place the berries, chia seeds, agave nectar, and lemon juice in a medium serving bowl. Using a rubber spatula or spoon, gently stir so the juices coat all the fruit. Sprinkle the lime zest
on top and serve.
