From Ilene: For nights when you really don’t feel like cooking dinner, this simple pizza has your back.
Total Time: 10 minutes | Makes: 4 servings
4 large tortillas*
1 cup hummus
1½ cups cooked chickpeas (or one 15-ounce can, rinsed and drained)
1½ cups chopped artichoke hearts (or one 15-ounce can, drained and chopped)
1 cup cherry tomatoes, sliced in half
¼ cup sliced black olives
¼ cup tahini
2 tablespoons chopped fresh parsley
Salt and black pepper, to taste
- Preheat the oven to 400°F.*
- Place the tortillas on a baking sheet. Spread the hummus over the tortillas. Top with the chickpeas, artichoke hearts, cherry tomatoes, and olives.
- Bake the tortillas until warm, 7–10 minutes.
- Drizzle the tahini over the tortillas, and sprinkle with the parsley, salt, and pepper. Slice and enjoy right away.
Gluten Free Note: I love the texture of brown rice tortillas, plus they’re gluten-free.
My Tips Friendly Suggestion: If you’re feeling especially lazy, go ahead and serve this pizza cold. It’s still great.
