From Ilene: For nights when you really don’t feel like cooking dinner, this simple pizza has your back.

Total Time: 10 minutes | Makes: 4 servings

4 large tortillas*
1 cup hummus
1½ cups cooked chickpeas (or one 15-ounce can, rinsed and drained)
1½ cups chopped artichoke hearts (or one 15-ounce can, drained and chopped)
1 cup cherry tomatoes, sliced in half
¼ cup sliced black olives
¼ cup tahini
2 tablespoons chopped fresh parsley
Salt and black pepper, to taste

  1. Preheat the oven to 400°F.*
  2. Place the tortillas on a baking sheet. Spread the hummus over the tortillas. Top with the chickpeas, artichoke hearts, cherry tomatoes, and olives.
  3. Bake the tortillas until warm, 7–10 minutes.
  4. Drizzle the tahini over the tortillas, and sprinkle with the parsley, salt, and pepper. Slice and enjoy right away.

Gluten Free Note: I love the texture of brown rice tortillas, plus they’re gluten-free.

My Tips Friendly Suggestion: If you’re feeling especially lazy, go ahead and serve this pizza cold. It’s still great.
