Living the Dream Brownies from The China Study Family Cookbook

Makes 18 brownies

When I owned my vegan bakery, I used to make a brownie that was so rich and full of fat that if you put one on a paper towel, it would soak right through. Parents were scared to give a whole brownie to their kids for fear of what might happen. This version is much healthier than that one but still a treat.

1 1/2 cups spelt flour
2 teaspoons double-acting baking powder
1/4 teaspoon sea salt
1/2 cup unsweetened cocoa powder
2 tablespoons ground flax seed
6 tablespoons water
3/4 cup pure maple syrup
3/4 cup unsweetened applesauce
2 teaspoons pure vanilla extract
1/2 cup vegan chocolate chips
1/2 cup finely chopped, lightly toasted walnuts

  1. Preheat the oven to 350°F.
  2. In a mixing bowl, whisk together the spelt flour, baking powder, sea salt, and cocoa powder.
  3. In a blender, puree the flax seed and water. Transfer to another mixing bowl. Add the maple syrup, applesauce, and vanilla extract.
  4. Add the flour mixture to the maple syrup mixture, along with the chocolate chips and walnuts, and gently fold everything together.
  5. Spoon the batter into a nonstick 9×13-inch baking pan and bake until a toothpick inserted into the center comes out clean, 25 to 30 minutes. Cool to room temperature before cutting.

    Could I use a different kind of flour in place of the spelt flour? I have whole wheat, oat, and garbanzo flour on hand. I would like to use something that’s already in my cupboard instead of buying another flour if possible.
