Chia seeds are loaded with beneficial nutrients and add a beautiful, thick texture to puddings and smoothies. I love making these pudding creations ahead of time in individual mason jars for a quick snack or meal. They’re perfect for the work/school morning rush.
Ingredients
1 cup unsweetened plant-based milk
1 to 2 teaspoons pure maple syrup
1/4 teaspoon pure vanilla extract
1/4 cup chia seeds
1 tablespoon unsweetened coconut flakes
1/4 teaspoon ground cinnamon
1 banana, sliced
1/2 cup fresh or frozen berries
Steps
- In a small bowl, mix the milk, maple syrup, vanilla, chia seeds, coconut flakes, and cinnamon until the chia seeds are evenly dispersed.
- Cover the bowl and refrigerate for at least 1 hour or overnight.
- Serve topped with bananas and fresh berries
Kim’s Hint: You can decrease the chia seeds to 2 tablespoons and add 1/4 cup oats for a quick and easy oatmeal chia seed pudding.
