Do you wake up with a raging sweet tooth? Me too. Eating this filling oatmeal is like having carrot cake for breakfast, but it’s full of ingredients that will get your day started off right.
OATMEAL
1 cup rolled oats
1 cup nondairy milk
1 cup water
1/2 cup shredded carrot
1/4 cup raisins
1/2 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1/4 teaspoon ground allspice
Dash of salt
TOPPINGS
2 tablespoons maple syrup
1/4 cup chopped walnuts
2 tablespoons shredded coconut
- In a small pot over low heat, bring the oats, nondairy milk, and water to a simmer.
- Stir in the carrot, raisins, vanilla extract, cinnamon, allspice, and salt. Continue to simmer, stirring occasionally, until all the liquid is absorbed, 7–10 minutes.
- Transfer to bowls, drizzle with maple syrup, and add the walnuts and coconut on top.

This recipe was a winner at our house. It was easy to pull together and we really liked the flavor and you could adjust the sweetness for each bowl by how much maple syrup you used.
